I tried setting up a booking service a while back and gave up because all the freebie off-the-shelf software available were junk.

For a Saas approach, try Checkfront http://wordpress.org/extend/plugins/checkfront-wp-booking/
Eliminates some of the Security issues by keeping booking data on a secure system, while still integrating nicely into WordPress.
It’s in beta though… but getting there.
